Is it Sunday already? How do these weekends fly by so quickly? As I've started to capture and document all the fun things I'm able to squeeze in over the weekend, I am realizing that my plans seem to revolve around where I'm getting my next meal. Honestly I wouldn't have it any other way :)

Bienvenido a Miami

In just a few short weeks I will be joining my closest friends in Miami for my bachelorette party. Holy cow. This wedding thing is becoming very real. I'm just so excited to get a little sun, hang out at the W South Beach (fingers crossed the weather is nice!) and to spend some QT with my best of buds. What is even more special about this bachelorette party is that it is a 2 for 1. My friend who is also getting married this year and I teamed up to make this one twice the fun....2 bachelorettes 1 party... insanity will ensue. 

After what seems like the coldest winter in history here in Boston I don't even remember what people wear when is warm sunny and amazing. Thus my hunt for resort wear began weeks in advance of this epic event and I'm excited to share some of my favorite finds!

Today's Obsession... Pregnant Women at the Golden Globes

These women make pregnancy look unfairly good. I mean... unbelievable. While I'm obsessed with Kerry Washington in any state, this photo in Balenciaga made me adore her even more further proving that Olivia Pope is impeccably dressed for any occasion.  Don't even get me started with Olivia Wilde (in Gucci). What a babe.

The Evaporation of New England's Ski Industry

This month bostonmagazine.com published a powerful story about the evaporation of New England's ski industry.  While I openly admit that I am a complete ski snob and normally would prefer to ski out west, this article made me extremely sad. 

I grew up skiing and skiing provided the foundation for many of my fondest childhood and adulthood memories. What a bummer it is to think that our kids might not get to experience it in quite the same way. Even further with the cost of operations ever increasing at these resorts and community ski slopes, the price of lift tickets keeps rising further and further out of reach for many families. 

This article made me realize how much I've taken this amazing experience for granted. In a world consumed by constant communication being out on the mountain with your family and friends with no distractions is a rare and awesome experience. Just this year while I was on a ski trip with my family, the storm clouds rolled in and my sister and I decided to take a break in  a lodge while the others continued to ski. Before this moment I couldn't tell you the last time I had a chance to sit down alone with my sister and just talk. Living on different coasts our relationship is usually sustained by text messages. Looking back, this conversation was such a highlight in my year. Thank you skiing. 

In short: Grab your loved ones and get out there on the mountain while you still can. Embrace that wind-chill and revel in those frozen toes, because before we know this awesome experience might be out of our reach.

The Project Bug

I am getting the project bug. This is something that seems to happen to me every year around this time when I want to refresh and recharge for the exciting new year ahead. Last year my goal was to completely revamp and rebuild my wardrobe after years of being a very poor student. Let's just say... mission accomplished and then some. 

This year my focus has turned to my home, or rather my apartment. I've always loved home decor but have never been in one place for long enough to really invest in my digs. Now that I'm settled in this quaint little city I think I'm ready to commit to making my apartment a home. I did some poking around (or rather stalking) of some incredible home stylist blogs mainly http://pennyweightblog.com, http://www.dreamsandjeans.com, and http://www.twelvechairsboston.com and I am just so excited I can hardly stand it. 

I have to say that Twelve Chairs Boston has completely won my heart and I can't wait to pay them a visit at their store this weekend to fully swoon over their goods in person. 

I'm completely obsessed with this vintage blue leather chair that once was at Twelve Chairs in Boston. Get in my house right now blue chair!

TGIH...Thank Goodness It's Hurcules!

In my opinion this whole Hurcules storm thing is the ideal way to kick-off the new year and keep that holiday feeling alive. I'm all comfy cozy working from my apartment today and it's been a shockingly productive day.  

I've also had about 5 cups of tea and 3 cups of coffee but who's counting? The people over at Flour are starting to joke that I'll starve if they close early due to this storm because I've been in there a total of 4 times already today... don't judge. It's so close and so delicious. The Moroccan Mint tea is my favorite. 

So how were your holidays? I just got back from a week in Vail with the family and it was just such a blast. It's seriously heaven (see photo). I won't give you all the gory details, but what I will give you is the #1 highlight which was NYE dinner at Game Creek Restaurant. It. Was. Awesome. If you are headed to Vail in the near future it is a must do. You take the gondola out of Lion's Head and then once at Eagle's Nest you get on a SNOW CAT which takes you into Game Creek bowl to this gorgeous chalet where food heaven awaits. Hint: While the entire menu is stellar, the lamb is extraordinary. 

Don't worry, we didn't gorge ourselves at 5 star restaurants the entire time, each "couple" in my family took a turn cooking everyone dinner at the house. My fiance and I made our staple meal, enchillacos, which would be perfect on a snowy day like today! 

Crock-Pot Enchillacos: 
  • Boneless, skinless chicken breasts (3 lb)
  • 1 can College Inn chicken broth (low sodium if available) 
  • 2 jars tomatillo salsa or sauce (I like the brands Frontera and Mrs. Renfros... I usually use one of each) 
  • 1 diced red pepper 
  • 1 diced green pepper 
  • 1 diced onion (red or white) 
  • Shredded Cheddar Cheese 
  • Sliced Avocado 
  • Tortillas (I like Joseph's low carb tortillas) 
Place chicken breasts in crock-pot and pour in chicken broth until chicken is just covered. Cook on Low for 3 hours. Drain out broth and shred chicken using two forks. Add tomatillo sauce, diced peppers, and diced onion. Cook on low for 2 hours. Stir and then pour a layer of Shredded cheese on top, cover, and let cook for 15 minutes. Warm tortillas and fill with enchillacos. Add avocado as a garnish and roll.
